Ok so when I think of the holidays I think of all those holiday treats that I LOVE to make so this month instead of just having recipes on thursdays I will be posting at least 2 a week on tuesday and thursday if not more :) there are so many wonderful recipes that I would love to share that make it kind of exasperating to pick out my favorites for only one time a week. Tis the season to share right? lol Alright then todays recipe is.......
BUCKEYES
These tasty peanut butter balls rolled in chocolate are AMAZING. Growing up I always remember going to my grandmothers the weekend before christmas eve and making these little chocolate morsels until there were tins of them were EVERYWHERE you looked. They hold such fond memories of my childhood that I am delighted to share this recipe with y'all and be able to carry on the tradition with my little ones :) And even better except for the dipping them in chocolate part the little guys will have a blast rolling them into balls without having to worry about them getting hurt which is my Favorite kind of recipe. this is what you need :
2 lbs. Peanut butter creamy or crunchy depends on what ya like
1 pound butter room temperature
3 pounds powdered sugar
2 12-ounce packages of semi-sweet chocolate chips
1/2 of a bar of paraffin wax
toothpicks for dipping
waxed paper
ok here we go in a large mixing bowl cream your peanut butter and butter . then add powdered sugar gradually till you have a dough you can roll into balls easily. I roll them into 1 inch balls usually stick a tooth pick in top and set them on a wax paper lined cookie sheet then place them in the fridge for about 15 minutes to chill them :) now while they are cooling you need to do some melting. next in a double boiler (or if your like me and dont have one heat a pot of boiling water get a large glass or metal mixing bowl and voila a homemade double boiler :) melt your chocolate chips and paraffin wax till smooth. right about now those delicious peanut butter balls should be ready to be dipped they need to be cool enough to be slightly firm to your touch. Now for the best part dip each ball in the chocolate melted goodness and place on a cookie sheet lined with wax paper I usually use the same pan let them set out and the chocolate will firm take the toothpicks out and enjoy. this recipe makes about 375 balls to 400 depending on the size you roll them into if you would like you can cut the ingredients by half to make a smaller batch. also instead of chocolate chips you can use white chocolate butterscotch chips and I have even heard someone use the white chocolate peppermint kisses never dont that one myself but it sure sounds great hope y'all all have a wonderful week and I will catch ya on the flip side next time around

whew the holidays
Well its here... the rush has officially began except...not to brag (OK maybe just a little) I have all of my Christmas shopping done minus stocking stuffers. the hubby and I went out thanksgiving night those people were crazy but I already had more than half our shopping done so it wasn't that big of a deal for us. Dinner was amazing and the hubby's adorable grandmother was in town from Wisconsin. Watching her with her great grandchildren was really sweet. I hope when I am her age I have half the spunk going for me. We decorated the outside of our house and some of the inside for Christmas. And I have to take my apron swap stuff to the post office tomorrow after another ultrasound yay! I realized even more so over this Thanksgiving there are so many overlooked things that we have to be ever so thankful for. And am going into the Christmas season with a grateful heart and a smile on my face. hope every ones holiday was as amazing as ours was and that everyone has a wonderful week!

Caramel pie. ohhh my!!!
I have noticed everyone seems to have themed days, so I have decided Thursdays will be about treats and sweets here @ This Dixie Girls Delights! Todays recipe is super easy but takes a while to make. If you have ever had a caramel pie you will love this one, and if not whew your in for a treat. Alright so lets get to getting....
you need 2 cans sweetened condensed milk NOT the pull top kind
1 Graham cracker crust
Cool whip, chocolate chips, chocolate syrup and a sweet tooth a mile or 2 long :)
in the biggest pot you have (think mashed potato worthy big) you need to fill it up with water as high as it will go without boiling over with cans in it. I usually place my cans in a dry pot and fill with water the water should be about 3-4 inches above the top of your cans of sweetened condensed milk :), a seperate saucepan also needs to be filled up with water. now onto the business end of things. your biggest pot of water needs to be on medium, also go ahead and turn on that other little saucepan of water on low your going to need it later. THIS PARTS VERY IMPORTANT do not let your water get below 1 inch above the can also after water in big pot is warm DO NOT add cold water the cans will explode the contents will go everywhere and you will have a HUGE mess on your ceiling, floor etc. , If you notice water in big pan getting low take water from little pan thats boiling hot and slowly pour it into the side of the pan. now after about 5 hours turn off the stove and go to bed. the next morning or 6-8 hours later open your cans with a can opener and spoon the richest caramel you ever tasted into your graham crust :) top with cool whip, chocolate chips and if desired chocolate syrup, then throw that bad boy in the freezer to firm up for later :)
If you want to make more you can boil about 6 cans at once using the same time and water method as described above I normally make these in batches and freeze 'em up to have on hand for get togethers, Hope y'all have a wonderful thursday

Today I am inspired
There are so many talented people out there and if you scroll through some of yalls wonderful blogs the ideas literally will overwhelm you. But since my crafting supplies are in disarray and they are driving me mad I cant try another project out before they are organized like they are supposed to be. So that was my big project for today. Now though they are B-eautiful if I do say so myself :) And completely ready for the christmas crafting that will be my madness for the next few weeks. It made me think about how sometimes in life we neglect things that we know need more attention but we just dont think we have the time for at the moment and keep putting off till someday when the problems alot worse than what it would have been initially. So now my goal for this week is to put time into those neglected things whether it be to do something for myself or to finish a project I know needs to be done within my home... With the Holdays fastly approaching its going to be harder to find that extra time but I promise myself and yall I will do it. Hope everyone has a blessed week
